Vegetarian
Straightforward, and not a compromise. The vegetable tagine is a real dish rather than an afterthought, the salad course is a dozen small plates of cooked and raw vegetables, and dishes built on lentils, chickpeas and bread are ordinary everyday food.
The two things to check:
- Stock. A vegetable couscous is often cooked with meat stock. Ask specifically.
- Pastilla. Usually pigeon or chicken. The vegetable version exists but is not the default.
Vegan
Harder, but workable with notice.
The obstacles are butter in the pastry and the bread, eggs in the baking, honey on almost everything sweet, and smen — a preserved butter — used in tagines where you would not expect it.
Where it works well is at home. A cook at a villa can produce excellent vegan food from the market if told in advance, because the base of Moroccan cooking is vegetables, pulses and spices. Where it works less well is walking into a small medina restaurant at nine at night and hoping.
Practical vocabulary
French is more useful than English for this. Sans viande for no meat, sans beurre for no butter, sans œuf for no egg, sans miel for no honey. Végétalien is vegan; végétarien is vegetarian, and the two get confused in both directions.
Breakfast
The weak point of a vegan stay. Moroccan breakfast is bread, pastries, eggs, butter, jam and honey. Ask the night before: fruit, olives, avocado, olive oil instead of butter and msemen made without it are all possible with warning, and unlikely without.
What to do
Say it when you book, in writing, using the specific word. “Vegetarian” understood loosely can arrive with chicken in it. Repeating it calmly on arrival is not rude — it is how it gets through the chain from the booking to the kitchen.
Common questions
Is Marrakech good for vegetarians?
Yes. Vegetable tagines, pulse dishes and the salad course are ordinary Moroccan food, not special requests. Check that couscous is not cooked with meat stock.
Is vegan food available?
With notice, yes, and it is much easier at a villa with a cook than in a small restaurant at short notice. Butter, eggs and honey are the usual obstacles.
What should I say in French?
"Sans viande", "sans beurre", "sans œuf", "sans miel". Note that "végétalien" means vegan and "végétarien" means vegetarian — the two are easily confused.
What about breakfast?
Standard Moroccan breakfast is bread, pastry, eggs and honey, so a vegan breakfast needs to be requested the night before. Fruit, olives and olive oil are all straightforward with warning.
